Deviled Egg Chicks

Easter is almost over but I had to share this last Easter recipe with you.

Another cute one :)

You can use whatever measurements you like for your deviled egg mixture. 




 




















Deviled Egg Chicks
  • hard boiled eggs
  • mayo
  • mustard
  • salt and pepper
  • carrot
  • black peppercorns
Cut the very bottom of the each hard boiled egg so they will sit up. Cut the very top off the hard boiled eggs to use as a hat. Remove yolks, mash in a bowl with mayo, mustard, and salt and pepper until smooth. Spoon into the egg whites, leaving some peeking out of the top, enough to place eyes and a nose on. Place peppercorns in the yolk mixture for the eyes, and trim carrot for feet and nose. Top with egg white that you cut off the top for a hat.

Things got a little messy trying to keep the lil chickie standing up, and the hat made it a little top heavy, so be careful!

Deviled Egg Daisies

Here's another simple Easter recipe using eggs.

Deviled Egg Daisies
from Hungry Happenings
  • 4 hard boiled eggs
  • deviled egg mixture (yolks, mayo, mustard, salt and pepper or whatever you like)
  • green onions
Cut eggs lengthwise down the middle, making 8 halves. Spoon deviled egg mixture in the center and arrange egg halves around the mixture, creating a daisy flower. Make a stem, leaves, and grass out of green onions.

*Note: I only used 7 halves because the other didn't peel prettily but use 8 so that your petals are connected.

Simple, cute, and only uses a few ingredients.

I would have used 8 egg halves but they didn't turn out too pretty when I peeled them. Still trying to perfect the hard boiled egg so that it peels perfectly. I've tried so many ways but none of them seem to work consistently. Any suggestions for the perfect hard boiled egg?

Baby Chickie Eggs


Happy Easter!!!

Today I'll be sharing 3 super simple Easter recipes using EGGS!

Easter isn't as fun as it used to be. I miss dressing up in my prettiest little girl Easter dress, getting piles and piles of candy in my Easter basket, and going to the neighborhood Easter egg hunt and searching for all those colorful eggs with other adorable kids. I can't wait to have kids one day so I can give them those experiences.

My future mama-in-law did give us little Easter "baskets" when we went out for my birthday dinner on Friday. It was so cute! She is so thoughtful, and there were some DELISH candy goodies in there, along with some lottery tickets. Love that woman. 

Ok enough of the sentimental stuff, let's get to the food.

 
















These are just hard boiled eggs cut in half, with peppercorns for eyes and carrots for noses. The original recipe uses black sesame seeds but I couldn't find any at the store so I had to improvise. They are cute cuz the eyes are tiny so if I can find some in the future, I'd use those.

Baby Chickie Eggs
from Just Jenn Recipes
  • hard boiled eggs
  • black goma sesame seeds OR peppercorns
  • 1 carrot   
Peel hard boiled eggs and slice in half carefully to not tear the yolk. 

Cut small wedge pieces from carrot to make noses. Add black sesame seeds or peppercorns for eyes.

Bunny Pretzels


I'm such a last minute kinda person. Procrastinator, they call it. 

I've always been this way when it came to my homework and school papers, and still am to this day in grad school.

I always wait until the weekend before my SRC posts are due to make the recipe.

And I always find myself sharing holiday-themed recipes with you like days before the big day. At best, a week in advance. I wanna be like those people who start posting Easter recipes in February, but I'm just not that organized!


























But hey, you've still got time to make these little easy cuties. They do take some patience if you want to get the decorating part down perfectly, which I didn't. But there's no cooking, and only a few ingredients. 

How cute are these Bunny Pretzels?!?! If you don't make them for the taste at least make them for their cuteness. 

























Bunny Pretzels
from Stop Lookin', Get Cookin'
  • Wilton candy melts - white, and pink and black if you don't have edible markers
  • Twist pretzels
  • Edible markers - Americolor Edible Markers suggested
  • Nonstick mat (I used Silpat) 
Place pretzels on a Nonstick mat.

Melt candy coating according to package directions.

Once candy coating is melted, spoon a small amount inside each pretzel until the holes are filled.

Let the chocolate set for 15 – 30 minutes before you start to draw the face with the edible markers. Wipe the markers off after each use. Sometimes the oils from the chocolate can clog the openings of the marker and they won’t work as well. If not using edible markers, pipe eyes, nose, and ears on with melted candy melts. Store in an airtight container for up to 2 weeks.

I haven't yet mastered my decorating skills, since these kinda look like Hello Kitty pretzels. And I bought Wilton's foodwriters, but they did not work well at all on the chocolate. So I ended up only using the black foodwriters for the eyes and whiskers... that's why the whiskers aren't perfect. And the pink wasn't working at all so I ended up using some pink Wilton's candy melts for the nose and ears. So maybe take Kendra's advice if you're going to buy some edible markers, and get the Americolor Edible Markers brand.
























 
Make these and put em in your kid's Easter baskets! Adults can get Easter baskets too, ya know :)

Cocoa Krispies Egg Nests


It's been a week since I've posted a recipe. Boo to that!

But I'm back on my game and bringing you these cutie Easter treats.

Cocoa Krispies Egg Nests!


























No cooking required, just a microwave! Yall know I like easy and quick. 

And they're adorable AND a rice krispie treat + Cadbury mini candy-coated Easter eggs.


































Cocoa Krispies Egg Nests
from Will Cook For Smiles
  • 3 cups Cocoa Krispies
  • 5 oz marshmallows 
  • 2 tablespoons butter 
  • Cadbury mini candy-coated Easter eggs
Place butter and marshmallows in a large microwave-safe bowl. Heat in microwave for 30 seconds. Stir. Heat for another 30 seconds or until completely melted. 

Add the Cocoa Krispies to the mixture and mix well. 

Lightly grease a muffin pan. Fill muffin cups with Cocoa Krispies mixture. Press the centers to form an indentation for the nest so that you can fill with Cadbury candies. Allow to cool before filling with candy.

Easter Recipe Roundup

Wow, three posts in one day! I'm happy about it. I love when I can get a free few minutes, or hours, to whip up some posts. My Saturday's been going great, how about yours? I didn't have class this morning, PJ and I woke up super early and watched some episodes of Parenthood, a show about Aaliyah (tear!!), and made these glorious muffins. Now he's off to work, I'm blogging, and later going shopping and to dinner with my girl, Marcey. Sounds like a good day to me!

Bacon and Avocado Topped Deviled Eggs {Holiday Recipe Club: Easter!}

Whoa there, it's been some time since I've posted a recipe. I'm sorry! I hate myself for it. Ok that's taking it a bit far, but I do feel guilt over it. I just can't find as much time to post recipes and take natural light photos. Not to mention I still haven't learned how to use my new dslr. Which isn't really new anymore because I've had it since December and my lens since January or February. Anybody wanna come to my house and give me a personal dslr lesson? Anyone?

I did find the time to participate in this month's Holiday Recipe Club challenge for Easter, and we had to make something using one or more of these three ingredients: spinach, carrots, or eggs. I chose eggs, cuz it's Easter duh. And what goes perfect with Easter?

Yep. Deviled eggs.

Not just any deviled eggs. Deviled eggs topped with two of my favorite things: bacon and avocado. Say what?! Yes, you read that right. 

























(I changed the name so that people wouldn't be mistaken that these were deviled eggs filled with an avocado mixture, because I've seen recipes like that. These are just normal deviled eggs topped with bacon and avocado). 

Bacon and Avocado Topped Deviled Eggs
slightly adapted from Lady Behind the Curtain
  • 6 eggs
  • 3 slices of thick-cut or center-cut bacon, chopped
  • 1/4 cup mayo
  • 1/2 tablespoon dijon mustard
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 of an avocado, sliced or diced
  • 2 teaspoon lemon juice
  • salt and pepper to top
Place eggs in a single layer in a 4-quart pot. Add enough cold water to cover the eggs by at least an inch. Bring to a boil over high heat. Remove from heat, cover, and let sit for 12-15 minutes. Drain. Run cold water over the eggs until cool enough to touch. Peel eggs and slice in half lengthwise. Remove yolks and place in a medium bowl. Set whites aside.

Meanwhile, in a skillet, cook bacon over low-medium heat until crisp. Drain grease; set aside. In a bowl, mash egg yolks with a fork. Add mayo, mustard, and 1/8 teaspoon black pepper. Stir to mix. 

Cut avocado into 12 equal pieces; toss with lemon juice. Pipe or spoon egg yolk mixture into egg whites halves. Top with an avocado piece and bacon piece(s). Sprinkle with additional salt and pepper if desired.

Cover and chill up to 4 hours. Makes 12.


Definitely top them with larger pieces of bacon and avocado though, like Sheryl did. What was I thinking depriving those deviled eggs of more bacon and avocado? I was trying to make mine all pretty for the camera, but afterwards I topped them with more bacon and avocado pieces. I love the crunch from the bacon and the added flavor from the avocados. I've already thought about making them again this week. Yep, that soon.




















These deviled eggs would be perfect to take to an Easter gathering or if you're staying home, make some for the fam! I just may whip some up to take to my mama's house this weekend. I'm sure she'd appreciate some help with the menu.

Oh, and you can always make these when it's not Easter time. You know, pretty much any time of day and for any occasion. Or lack of an occasion.

One More Easter Goodie - Easter Egg Nests!
















The other day I told you I had another Easter recipe, and I do not want to disappoint! I made these adorable little Easter Egg Nests. I'm sure you have seen a similar version all over food blogland. I combined techniques from two different recipes and came up with my own twist on these adorable "nests". Some people like to use Peeps as the birds. We aren't too fond of Peeps at our house, so I didn't want to use them just for the look of it. I decided to use candy eggs to fill up those nests instead of Peeps. They can still be nests! Just Easter egg nests instead of birds' nests :)
















Easter Egg Nests

Melt peanut butter and butterscotch morsels in a large pot. Add in the chocolate square. Mix well. Add in the pretzel sticks, coating evenly. Place on parchment paper and assemble pretzels to look like nests, leaving a center which will be filled with eggs. Chill to let the chocolate harden. Once chocolate has hardened, fill with eggs.

Cereal Treat Easter Eggs!

 













I'm not gonna lie, I felt like a proud food blogger this past weekend because I made two kinds of Easter-themed treats! And both were ever so simple to make! The first are these Cereal Treat Easter Eggs. They are a different take on the classic rice krispie treat, except using Fruity Pebbles. And I must admit, I thought they tasted better than regular rice krispie treats! Why doesn't EVERYONE make them like this? I dunno, but I'm gonna! They are so purty and colorful, perfect for Easter! 

I recommend using a larger pot so that there is plenty of room to add all of the marshmallows and still room to stir. I used a smaller pot and the butter was at the bottom browning away and somewhat burning the marshmallows on the bottom. And it was hard to stir. So some of them turned out being made with more of a brown butter, but the taste was still great! I love the taste of brown butter in a dessert, so really it wasn't a bad thing! Besides making a few of the eggs look a bit dirty instead of bright and colorful. I will definitely be making these more often! I was so sad that it only made about 7 (I had enough for another half an egg but there was no point trying to shape that into an egg so I just ate it. Warm. Oh my deliciousness!). Next time I will up the amount so that I can have enough to take into both my and PJ's work.

Yay for natural light! I am beginning to become a natural light freak. I am always talking about natural light this, natural light that. PJ is becoming a tad annoyed. I'm always nagging, "We need to cook early so I can get my natural light!" or "Let's open our windows so I can see that natural light, it makes me feel better and the day seem cheerier!" It really does make things better, my attitude AND my photography, see... look at my photos! They are improving  : ) I literally took my plate on the porch and took a picture outside. My kitchen doesn't get good light, so a food blogger's gotta do what a food blogger's gotta do, ya know?
















 















Cereal Treat Easter Eggs
  • 1/4 cup butter
  • 10 oz bag of marshmallows
  • 5 cups Fruity Pebbles
  • plastic Easter eggs, for shaping
In a large pot, melt butter on low-medium heat. Add marshmallows and stir until melted. Pour in the cereal and mix.

Spray plastic eggs with cooking spray. Spoon the cereal mixture into the bottom half of the egg and then close to form shape. Wait at least 10 seconds for cereal to take the shape of the egg.

*You can use one or two plastic eggs to shape the cereal mixture. I used 6 because that's what came in a package and so I could shape more at one time. You can also use vertical or horizontally split plastic eggs. I used horizontal and spooned the mixture into the bottom part of the egg and closed it off with the top part of the plastic egg.

So I know Easter is over, but please make these next Easter.... mmmmk? And they don't have to be in the shape of Easter eggs. You can make these babies just for any ole occasion... just make them in squares like rice krispie treats! And of course you can use any cereal you like. But I'd go with the Fruity Pebbles if I were you.
