What I love about this time of year - cooking outside! Not just the mains but the sides too. It is hot, hot, hot and nobody wants to fire up the oven when they can fire up the grill.

PC Garlic & Herb Marinade |
PC makes it easy with their delicious marinades like the PC Garlic & Herb Marinade that we used on the chicken. I even mopped a bit on the carrots! Just place your chicken into a freezer bag with enough marinade to coat and let sit in the fridge (on a plate, just in case) for 24 hours. Let chicken rest on the counter for 20 minutes before grilling, to take the chill off. Mop with additional marinade when grilling. Dispose of leftover marinade that has come into contact with the chicken. Eat delicious grilled chicken!
And what will you do with the leftovers from your fabulous grill night?
Make wraps, of course!
Shred leftover chicken,
place in a soft tortilla,
add greens,
add avocado mayo, wrap and enjoy!
Don't forget the chips!
